Pecan Pie

pecan piePECAN PIE

1 cup Karo light or dark corn syrup

3 eggs, slightly beaten

1 cup sugar

2 tbsp butter, melted

1 tsp vanilla

2¾ cups pecans

1 - 9" unbaked or frozen deep dish pie crust

 

Preheat oven to 350º F. 

In a medium bowl beat eggs slightly with fork.  Add sugar, Karo corn syrup, butter and vanilla.  Stir until blended.  Stir in pecans.  Pour into pie crust.  Bake 50 - 55 min or until knife inserted halfway between the center & edge comes out clean.  Cool on a wire rack.

 

Chocolate Pecan Pie -

Add 4 oz. semi-sweet or 2 oz. unsweetened chocolate, melted into the sugar & Karo syrup mixture.

Hint:  Spray your measuring cup with a non stick cooking spray before measuring the Karo & it will pour more easily.

You'll love this one.  I actually put in more pecans than most recipes call for, but don't find an issue with that.  And besides, isn't it a Pecan pie!

I make mine the same way and have for years, I use the light syrup.

Missy - I agree and use light syrup myself.  I find that if I use the chocolate, the dark syrup actually makes it too heavy.

I had a chocolate Pecan Pie many years ago and never forgot it.  I may just make this recipe this year for Thanksgiving.  Thank you!

Marc,

Your timing couldn't have been more perfect. My husband has a deep love for pecan pie. The pecan pie has in the last decade been the showcase dessert for a close friend of ours at Thanksgiving. She supplied the pie that my husband would dream of all year.

But this year we'll be spending Thanksgiving in a different locale and the friend won't be around with her fantastic pie.

My husband has asked me (no, make that begged) to make a pecan pie this year...my first. I'll use your recipe. My husband is going to be pleased with the extra pecans. I may put a splash of Jack Daniel's in it, as one thing that was particularly special about our friend's pies were that they were "Bourbon Pecan Pies".

Marc, your recipe sounds great, i make a similar recipe, and add extra pecans also.. but to start out .. GO OUTSIDE the week before pie making and PICK up your pecans,  shell them and let them dry on the countertop til baking day. I cover with wax paper loosely.  My pecans are sitting on the cupboard right now getting ready for that pie.  ;)  Happy Thanksgiving. gail smiling in Austin Texas

Tom - I would love to say, yes!  But I got the pick of the cornbread off of the internet.  If you notice, it doesn't have corn kernels in it.  Wish I was that good of a photog.

Thanks for the recipe.  I love pecan pie, my husband loves pumpkin, I'm not a big fan.  I am looking for a to die for recipe for pumpkin pie and haven't found one yet.

I upgraded the pie a bit...used Booker's instead of Jack because that's what I had. And I roasted the pecans.  

My husband is very excited by this pie!

Veonica - Thanks!  I aim to please!  Your pie sound great!  Here's the recipe for the pumpkin pie that I found for you on the net.

INGREDIENTS

  • 1 (15 ounce) can pumpkin
  • 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
  • 2 eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 (9 inch) unbaked pie crust

 

DIRECTIONS

  1. Preheat oven to 425 degrees F. Whisk pumpkin, EAGLE BRAND®, eggs, spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes.
  2. Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Store leftovers covered in refrigerator.

Judy - I don't think you can consider it dietetic or diabetic with 1 cup of sugar. From what I just checked on the net, you can substitute that for 1/2 cup of splenda or something similar.

Browsing through you blog and...WHAM!  PECAN PIE!!!  You gave my appetite a jumpstart with that one.  I'll have to give the recipe a try when the family comes over for Christmas.

Thanks for the compliment on my post. I'm working on getting a little faster with them.  They take me way too long.  I'm amazed at how some people can just churn them out.  All in good time!

Christopher - I understand what you are saying.  Many of my blogs are quite easy to write, but the ones for the communities take me quite a bit of time.  The one for Altamonte Springs took me at least 2 hours.
